Ingredients:

200g potatoes, peeled and diced
100g onion, diced
2 cloves garlic, minced
1/2 teaspoon dried thyme leaves
1/4 teaspoon ground black pepper
1/4 teaspoon paprika powder
300ml vegetable stock or broth
150ml coconut milk or almond milk (unsweetened)
100g canned clams, drained and rinsed

Cooking Instructions:

In a large pot over medium heat, add the potatoes, onion, garlic, thyme leaves, black pepper and paprika powder. Stir to combine. Cook for 5 minutes until the vegetables are softened.
Add the vegetable stock or broth and bring to a boil. Reduce heat to low and simmer for 15 minutes until the potatoes are tender.
Add the coconut milk or almond milk and clams to the pot and stir to combine. Simmer for an additional 5 minutes until heated through.
Serve hot with your favorite toppings such as fresh herbs or croutons if desired. Enjoy!
