Ingredients:

200g lean beef mince
1 onion, diced
2 cloves garlic, minced
1 red bell pepper, diced
2 carrots, diced
1 teaspoon paprika powder
½ teaspoon ground cumin
½ teaspoon dried oregano
¼ teaspoon ground black pepper
¼ teaspoon chili flakes (optional)
400ml beef stock or water
2 tablespoons tomato paste
100g cooked macaroni or other pasta of choice

Cooking Instructions:

Heat a large saucepan over medium heat. Add the beef mince and cook until browned. Remove from the pan and set aside.
Add the onion, garlic, bell pepper and carrots to the pan and cook for 5 minutes until softened.
Add the paprika powder, cumin, oregano, black pepper and chili flakes (if using) to the pan and stir to combine. Cook for 1 minute until fragrant.
Return the beef mince to the pan along with the beef stock or water and tomato paste. Stir to combine then bring to a simmer over medium heat. Reduce heat to low and simmer for 25 minutes until thickened slightly.
Add the cooked macaroni or other pasta of choice to the goulash and stir through until combined. Simmer for an additional 5 minutes until heated through then remove from heat.
Serve hot with your favorite sides such as steamed vegetables or a salad! Enjoy!
