Ingredients:

200g lean beef steak, thinly sliced
1 large zucchini, cut into thin strips
2 cloves garlic, minced
1 teaspoon fresh ginger root, grated or minced
2 tablespoons low sodium soy sauce or tamari sauce
1 tablespoon rice vinegar or apple cider vinegar
2 tablespoons water or vegetable broth

Cooking Instructions:

Heat a large non-stick skillet over medium heat. Add the beef slices and cook for 3-4 minutes until lightly browned. Remove from the pan and set aside.
Add the zucchini strips to the same skillet and cook for 3-4 minutes until lightly browned.
Add the garlic and ginger to the pan and cook for 1 minute until fragrant.
Return the beef to the pan along with the soy sauce or tamari sauce, rice vinegar or apple cider vinegar, and water or vegetable broth. Cook for an additional 5 minutes until everything is heated through and combined together nicely.
