This oil-free beef and rice casserole is an easy yet flavorful meal that can be enjoyed without all of the added fat! Ingredients:

150g lean ground beef
1/2 cup uncooked white rice
1/2 cup diced onion
1/2 cup diced bell pepper
1/2 cup diced celery
1/4 teaspoon garlic powder
1/4 teaspoon dried oregano leaves
1/4 teaspoon dried thyme leaves
2 tablespoons tomato paste
2 tablespoons Worcestershire sauce
2 cups low
sodium beef broth

Cooking Instructions:

Preheat oven to 350°F.
In a large skillet over medium heat, cook the ground beef until browned. Drain off any excess fat.
Add the onion, bell pepper, celery, garlic powder, oregano and thyme to the skillet and cook for an additional 5 minutes or until vegetables are softened.
Add the tomato paste and Worcestershire sauce to the skillet and stir to combine. Cook for an additional minute or two until fragrant.
Add the cooked beef mixture to a 9×13 inch baking dish along with the uncooked rice and beef broth. Stir to combine all ingredients together evenly in the dish. Cover with foil and bake in preheated oven for 45 minutes or until rice is cooked through and liquid has been absorbed by the rice.
Remove from oven and let cool slightly before serving warm with your favorite side dishes or toppings of choice! Enjoy!
