Ingredients:

500g lean beef mince
2 large potatoes, peeled and diced into cubes
1 onion, diced
2 cloves garlic, minced
1 red bell pepper, diced
1 teaspoon paprika powder
1 teaspoon dried oregano leaves
2 cups vegetable broth or stock
Salt and pepper to taste

Cooking Instructions:

Heat a large pot over medium heat. Add the beef mince and cook until browned.
Add the potatoes, onion, garlic and bell pepper to the pot. Cook for 5 minutes until the vegetables are softened.
Add the paprika powder and oregano leaves to the pot and stir to combine. Pour in the vegetable broth or stock and bring to a boil.
Reduce heat to low and simmer for 30 minutes until the potatoes are tender. Season with salt and pepper to taste before serving.
