Ingredients:

250g lean beef mince
1 onion, diced
2 cloves garlic, minced
1 red pepper, diced
2 carrots, diced
1 teaspoon dried oregano
1 teaspoon dried thyme
2 tablespoons tomato paste
500ml vegetable stock
150g frozen peas

Cooking Instructions:

Preheat the oven to 180°C/350°F.
Heat a large non-stick pan over medium heat and add the beef mince. Cook for 5 minutes until browned.
Add the onion, garlic, red pepper and carrots to the pan and cook for a further 5 minutes until softened.
Add the oregano, thyme and tomato paste to the pan and stir to combine. Cook for a further minute before adding the vegetable stock. Bring to a simmer then reduce heat to low and simmer for 15 minutes until thickened slightly.
Add the frozen peas to the pan and stir through before transferring everything into an ovenproof dish. Bake in preheated oven for 20 minutes until bubbling hot throughout.
Serve with your favorite side dishes or enjoy as is!
