Ingredients:

200g lean beef, thinly sliced
1 onion, diced
2 cloves garlic, minced
1 red bell pepper, diced
200g mushrooms, sliced
2 tablespoons soy sauce
2 tablespoons rice vinegar
1 teaspoon sesame oil
1 teaspoon freshly grated ginger
Salt and pepper to taste

Cooking Instructions:

Heat a large skillet over medium-high heat. Add the beef and cook until browned on both sides. Remove from the pan and set aside.
Add the onion to the pan and cook for 3 minutes until softened. Add the garlic and bell pepper and cook for an additional 2 minutes.
Add the mushrooms to the pan and cook for 3 minutes until softened. Return the beef to the pan along with the soy sauce, rice vinegar, sesame oil, ginger, salt and pepper. Cook for an additional 3 minutes until everything is heated through.
Serve hot over cooked rice or noodles if desired. Enjoy!
