Ingredients:

200g lean ground beef
1/2 cup diced onion
1/2 cup diced bell pepper
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1/4 teaspoon salt
1 cup frozen corn kernels
1/2 cup low sodium beef broth or stock
2 tablespoons tomato paste

Cooking Instructions:

Preheat oven to 375°F (190°C).
In a large skillet over medium heat, cook the ground beef until browned. Add in the onion and bell pepper and cook until softened. Stir in the garlic powder, black pepper, salt, corn kernels, beef broth or stock and tomato paste. Simmer for 5 minutes.
Transfer the mixture to an oven safe baking dish and bake for 25 minutes or until heated through.
