Ingredients:

2 slices of whole wheat bread
2 ounces of lean ground beef
1/4 cup of diced onion
1/4 cup of diced bell pepper
1/2 cup of shredded cheddar cheese
Salt and pepper to taste

Cooking Instructions:

Heat a non-stick skillet over medium heat. Add the ground beef, onion, bell pepper, salt and pepper. Cook until the beef is browned and cooked through.
Toast the bread in a toaster or on the skillet until lightly golden brown.
Place the cooked beef mixture on one slice of toast and top with the shredded cheddar cheese. Place the other slice of toast on top to form a sandwich.
Serve immediately or wrap in foil for later consumption.
