Ingredients:

200g lean beef mince
1 large carrot, diced
1 small onion, diced
2 cloves garlic, minced
1 cup vegetable broth or stock
½ teaspoon dried oregano leaves
½ teaspoon dried thyme leaves
¼ teaspoon ground black pepper
¼ teaspoon sea salt

Cooking Instructions:

In a large saucepan over medium heat, add the beef mince and cook until browned. Break up any large chunks with a wooden spoon.
Add the diced carrot, onion and garlic to the pan and cook for 3-4 minutes until softened.
Pour in the vegetable broth or stock and stir to combine. Add the oregano, thyme, pepper and salt to the pan and stir again.
Bring the mixture to a boil then reduce heat to low and simmer for 30 minutes or until the carrots are tender. Stir occasionally during cooking time.
Serve hot with your favorite side dish or over cooked grains such as quinoa or rice for a complete meal. Enjoy!
