Ingredients:

200g lean beef strips
1 small butternut squash, peeled and cubed
2 cloves garlic, minced
1 teaspoon fresh ginger, grated
2 tablespoons soy sauce or tamari sauce (gluten
free)
2 tablespoons rice vinegar or apple cider vinegar
1 teaspoon sesame oil (optional)
2 tablespoons water or vegetable broth

Cooking Instructions:

Heat a large skillet over medium heat. Add the beef strips and cook for 3-4 minutes until lightly browned. Remove from the pan and set aside.
Add the butternut squash cubes to the skillet and cook for 5 minutes until lightly browned.
Add the garlic and ginger to the pan and cook for 1 minute until fragrant.
Return the beef strips to the pan along with the soy sauce or tamari sauce, rice vinegar or apple cider vinegar, sesame oil (if using), and water or vegetable broth. Stir to combine everything together.
Cook for an additional 5 minutes until everything is heated through and cooked to your desired doneness. Serve hot with your favorite side dish!
