Ingredients:

200g lean ground beef
1 onion, diced
2 cloves garlic, minced
1 red bell pepper, diced
1 teaspoon chili powder
1 teaspoon ground cumin
½ teaspoon smoked paprika
¼ teaspoon cayenne pepper (optional)
400g can of black beans, drained and rinsed
400g can of diced tomatoes
250ml vegetable stock

Cooking Instructions:

In a large pot over medium heat cook the ground beef until browned. Drain off any excess fat.
Add the onion and garlic to the pot and cook for 3-4 minutes until softened. Add the bell pepper and cook for another 2 minutes.
Add the chili powder, cumin, smoked paprika and cayenne pepper (if using) to the pot and stir to combine. Cook for another minute or two until fragrant.
Add the black beans, diced tomatoes and vegetable stock to the pot and stir to combine. Bring to a boil then reduce heat to low and simmer for 30 minutes or until thickened slightly. Taste for seasoning adding salt or more spices as desired.
Serve with your favorite toppings such as cheese, sour cream or avocado slices! Enjoy!
