Ingredients:

250g lean beef mince
1 onion, diced
2 cloves garlic, minced
1 carrot, diced
1 celery stalk, diced
2 cups vegetable broth
1 cup water
½ cup pearl barley
2 bay leaves
½ teaspoon dried thyme
Salt and pepper to taste

Cooking Instructions:

Heat a large pot over medium heat. Add the beef mince and cook until browned. Remove from the pot and set aside.
Add the onion to the pot and cook until softened. Add the garlic and cook for an additional minute.
Return the beef mince to the pot along with the carrot and celery. Cook for 5 minutes or until vegetables are softened.
Pour in the vegetable broth and water then add in the pearl barley, bay leaves, thyme, salt and pepper. Bring to a boil then reduce heat to low and simmer for 30 minutes or until barley is cooked through.
Serve hot with your favorite toppings such as cheese or sour cream if desired!
