Ingredients:

200g dry ziti pasta
1/2 cup diced onion
2 cloves garlic, minced
1/2 teaspoon dried oregano
1/4 teaspoon red pepper flakes (optional)
1/2 cup vegetable broth or water
1 can (400g) diced tomatoes, drained and rinsed
2 tablespoons tomato paste
2 tablespoons nutritional yeast
Salt and pepper to taste

Cooking Instructions:

Preheat oven to 350°F (175°C). Grease an 8×8 inch baking dish with non-stick cooking spray.
Bring a large pot of salted water to a boil over high heat. Add the ziti pasta and cook according to package instructions until al dente. Drain and set aside.
In a large skillet over medium heat, add the onion and garlic and cook until softened, about 5 minutes. Add the oregano, red pepper flakes (if using), vegetable broth or water, diced tomatoes, tomato paste, nutritional yeast, salt and pepper. Simmer for 10 minutes until thickened.
Add the cooked ziti pasta to the sauce in the skillet and stir to combine. Transfer the mixture to the prepared baking dish and spread out evenly. Bake for 20 minutes until bubbly and golden brown on top.
Let cool for 5 minutes before serving. Enjoy!
