Ingredients:

120g all
purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
110g butter, softened to room temperature
110g light brown sugar
50g granulated sugar
1 large egg
2 teaspoons vanilla extract
150g rolled oats
75g chopped walnuts

Cooking Instructions:

Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats. Set aside.
In a medium bowl, whisk together the flour, baking powder, baking soda and salt until combined. Set aside.
In a large bowl using a hand mixer or stand mixer fitted with the paddle attachment, beat the butter and both sugars together on medium speed until light and fluffy, about 3 minutes. Add the egg and vanilla extract and beat on high until combined. Scrape down the sides of the bowl as needed.
With the mixer on low speed, slowly add in the dry ingredients until combined. Do not overmix!
Using a rubber spatula or wooden spoon, fold in the oats and walnuts until combined.
Using a cookie scoop or spoon, scoop out 2 tablespoons of cookie dough onto prepared baking sheets about 2 inches apart from each other (8 cookies per sheet). Bake for 12-15 minutes or until lightly golden brown around the edges but still soft in the center when touched lightly with your finger tip (cookies will continue to bake on hot cookie sheet after removed from oven). Allow cookies to cool on baking sheet for 5 minutes before transferring to cooling rack to cool completely before serving/storing in an airtight container at room temperature for up to 5 days or freeze for up to 3 months.
