Ingredients:

1/2 cup rolled oats
1/4 cup all
purpose flour
1/4 teaspoon baking powder
1/4 teaspoon ground cinnamon
1/8 teaspoon salt
2 tablespoons butter, melted and cooled slightly
2 tablespoons honey or maple syrup
1 large egg white
1/2 cup diced pear (about one small pear)

Cooking Instructions:

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, whisk together the oats, flour, baking powder, cinnamon and salt.
In a separate bowl, whisk together the melted butter or coconut oil, honey or maple syrup and egg white until combined.
Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the diced pear.
Drop heaping tablespoonfuls of dough onto the prepared baking sheet about 2 inches apart. Bake for 12-15 minutes until golden brown around the edges. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. Enjoy!
