Ingredients:

60g butter, softened
50g light brown sugar
1 egg yolk
1 teaspoon vanilla extract
90g all
purpose flour
½ teaspoon baking powder
¼ teaspoon baking soda
¼ teaspoon salt
80g rolled oats
50g chopped peaches

Cooking Instructions:

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, cream together the butter and sugar until light and fluffy. Beat in the egg yolk and vanilla extract until combined.
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients until just combined. Stir in the oats and chopped peaches until evenly distributed throughout the dough.
Drop spoonfuls of dough onto prepared baking sheet about 2 inches apart. Bake for 12-15 minutes or until golden brown around the edges. Allow to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
