Ingredients:

120g all
purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
110g butter, softened to room temperature
100g light brown sugar
50g granulated sugar
2 large eggs
2 teaspoons vanilla extract
2 teaspoons orange zest
200g rolled oats

Cooking Instructions:

Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper. Set aside.
In a medium bowl, whisk together the flour, baking powder, baking soda and salt. Set aside.
In a large bowl using an electric mixer on medium speed, beat the butter and sugars until light and fluffy (about 3 minutes). Add the eggs one at a time, beating well after each addition. Beat in the vanilla extract and orange zest until combined.
Gradually add the dry ingredients to the wet ingredients and mix until just combined. Stir in the oats until evenly distributed throughout the dough.
Using a cookie scoop or spoon, drop rounded tablespoons of dough onto prepared baking sheets about 2 inches apart from each other. Bake for 12-15 minutes or until golden brown around edges but still soft in center. Allow cookies to cool on baking sheet for 5 minutes before transferring to wire rack to cool completely before serving or storing in an airtight container for up to 5 days at room temperature or up to 3 months in freezer.
