Ingredients:

50g rolled oats
25g plain flour
1/2 teaspoon baking powder
1/4 teaspoon ground cinnamon
50g unsalted butter, melted and cooled slightly
25g light brown sugar
1 medium egg
1/2 teaspoon vanilla extract
50g peeled and diced apple

Cooking Instructions:

Preheat the oven to 180°C (350°F). Line a baking sheet with parchment paper.
In a medium bowl, combine the oats, flour, baking powder and cinnamon. Set aside.
In a separate bowl, whisk together the melted butter and sugar until combined. Add in the egg and vanilla extract and whisk until smooth.
Add the wet ingredients to the dry ingredients and mix until just combined. Fold in the diced apple pieces until evenly distributed throughout the dough.
Using a tablespoon or cookie scoop, drop spoonfuls of dough onto the prepared baking sheet about 2 inches apart from each other. Bake for 12-15 minutes or until golden brown around the edges. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely before serving.
