Ingredients:

200g salmon fillet
2 tablespoons miso paste
2 tablespoons honey
2 tablespoons soy sauce
2 tablespoons sesame oil
1 tablespoon rice vinegar
1 teaspoon grated ginger
2 cups mixed salad leaves
1/2 cup cherry tomatoes, halved
1/4 cup sliced cucumber
1/4 cup sliced red onion

Cooking Instructions:

Preheat oven to 200°C.
In a small bowl, mix together miso paste, honey, soy sauce, sesame oil, rice vinegar and grated ginger.
Place the salmon fillet in a baking dish and spread the miso glaze over the top.
Bake in the preheated oven for 10 minutes.
Meanwhile, assemble the salad by combining the salad leaves, cherry tomatoes, cucumber and red onion in a bowl.
Once the salmon is cooked, remove from the oven and flake into the salad.
Drizzle with the remaining miso glaze and serve.
