Ingredients:

100g butter, softened
75g caster sugar
1 egg yolk
1 teaspoon vanilla extract
175g plain flour
½ teaspoon baking powder
¼ teaspoon salt
2 tablespoons cocoa powder
100g dark chocolate chips
2 tablespoons peppermint extract

Cooking Instructions:

Preheat oven to 180°C/350°F/Gas Mark
Line two baking trays with parchment paper.
In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg yolk and vanilla extract until combined.
In a separate bowl, sift together the flour, baking powder, salt and cocoa powder. Gradually add this to the butter mixture until fully incorporated.
Stir in the chocolate chips and peppermint extract until evenly distributed throughout the dough.
Roll tablespoonfuls of dough into balls and place onto prepared baking trays, leaving enough space between each cookie for them to spread during baking. Bake for 8-10 minutes or until golden brown around the edges. Allow to cool on trays before transferring to a wire rack to cool completely. Enjoy!
