Ingredients:

2 slices of whole wheat bread, cubed
1/2 cup cherry tomatoes, halved
1/4 cup cucumber, diced
1/4 cup red onion, diced
2 tablespoons fresh parsley leaves
2 tablespoons olive oil
2 tablespoons white wine vinegar
1 teaspoon honey
Salt and pepper to taste

Cooking Instructions:

Preheat the oven to 350°F (175°C). Place the cubed bread on a baking sheet and bake for 10 minutes until golden brown. Set aside to cool.
In a large bowl combine the tomatoes, cucumber, red onion and parsley leaves. Add the cooled bread cubes and mix together.
In a small bowl whisk together the olive oil, white wine vinegar and honey until combined. Pour over the salad ingredients and mix together until everything is evenly coated in dressing. Season with salt and pepper to taste.
Serve immediately or chill in the refrigerator for up to 4 hours before serving. Enjoy!
