Ingredients:

50g butter, softened
50g light brown sugar
1 egg yolk
1 teaspoon vanilla extract
75g plain flour
¼ teaspoon baking powder
¼ teaspoon salt
50g chopped walnuts

Cooking Instructions:

Preheat oven to 180°C/350°F/Gas Mark
Grease a baking tray with butter or line with parchment paper.
In a bowl, cream together the butter and sugar until light and fluffy. Beat in the egg yolk and vanilla extract until combined.
In a separate bowl, sift together the flour, baking powder and salt. Gradually add this to the creamed mixture until fully incorporated. Stir in the chopped walnuts until evenly distributed throughout the dough.
Using your hands, roll tablespoonfuls of dough into balls and place on the prepared baking tray, leaving enough space between each cookie for them to spread during cooking. Bake for 12-15 minutes or until golden brown around the edges. Allow to cool on a wire rack before serving.
