Ingredients:

1/4 cup of butter, softened
1/4 cup of granulated sugar substitute (such as Splenda)
1 egg yolk
1 teaspoon of vanilla extract
1 cup of all
purpose flour
1/2 teaspoon of baking powder

Cooking Instructions:

Preheat oven to 350°F. Grease a baking sheet with butter or cooking spray.
In a medium bowl, cream together the butter and sugar substitute until light and fluffy. Beat in the egg yolk and vanilla extract until combined.
In a separate bowl, whisk together the flour and baking powder. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
Roll out dough on a lightly floured surface to about ¼ inch thick and cut into desired shapes using cookie cutters or a knife. Place cookies on prepared baking sheet about 2 inches apart.
Bake for 8-10 minutes or until lightly golden brown around the edges. Allow cookies to cool completely before serving or storing in an airtight container for up to 5 days.
