Ingredients:

1 cup all
purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 cup butter, softened
1/4 cup granulated sugar substitute (such as Splenda)
1 large egg, lightly beaten
2 tablespoons milk or cream of choice (dairy
free if desired)
1 teaspoon vanilla extract
3/4 cup chopped fresh strawberries

Cooking Instructions:

Preheat oven to 350°F. Grease a baking sheet with cooking spray or line with parchment paper.
In a medium bowl, whisk together the flour, baking powder and salt. Set aside.
In a large bowl, cream together the butter and sugar substitute until light and fluffy. Beat in the egg until combined. Stir in the milk and vanilla extract until blended. Gradually add the dry ingredients to the wet ingredients and mix until just combined. Fold in the chopped strawberries until evenly distributed throughout the dough.
Drop spoonfuls of dough onto prepared baking sheet about 2 inches apart from each other. Bake for 12-15 minutes or until golden brown around the edges and set in the center. Allow to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely before serving. Enjoy!
