Ingredients:

2 tablespoons butter, softened
2 tablespoons granulated sugar substitute (such as Splenda)
1 teaspoon vanilla extract
1 egg yolk
1/2 cup all
purpose flour
1/4 teaspoon baking soda
1/4 teaspoon cream of tartar
1/4 teaspoon ground cinnamon

Cooking Instructions:

Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.
In a medium bowl, cream together the butter and sugar substitute until light and fluffy. Add in the vanilla extract and egg yolk and mix until combined.
In a separate bowl, whisk together the flour, baking soda, cream of tartar, and cinnamon until combined. Slowly add the dry ingredients to the wet ingredients and mix until just combined.
Scoop out tablespoon-sized balls of dough onto the prepared baking sheet about 2 inches apart from each other. Bake for 8-10 minutes or until lightly golden brown on top. Allow to cool before serving.
