Ingredients:

1/2 cup natural peanut butter (no added sugar)
1/4 cup honey or maple syrup
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1/4 teaspoon salt
1 large egg, lightly beaten
2 tablespoons coconut oil, melted
3/4 cup all
purpose flour
2 tablespoons jelly or jam of your choice

Cooking Instructions:

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, mix together the peanut butter, honey or maple syrup, vanilla extract, baking soda and salt until combined. Add the egg and melted coconut oil and mix until combined.
Add the flour to the mixture and stir until just combined. Do not overmix.
Scoop out tablespoon-sized balls of dough onto the prepared baking sheet. Use your fingers to flatten each ball slightly and make an indentation in the center of each cookie with your thumb. Fill each indentation with about ½ teaspoon of jelly or jam of your choice.
Bake for 8-10 minutes until golden brown around the edges. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely before serving. Enjoy!
