Ingredients:

60g of all
purpose flour
30g of rolled oats
1 teaspoon of baking powder
1/4 teaspoon of salt
30ml of vegetable oil
30ml of almond milk (or any other plant
based milk)
1/2 teaspoon of vanilla extract
1/2 teaspoon of ground cinnamon
1/4 cup of mashed peaches (fresh or canned)

Cooking Instructions:

Preheat your oven to 350°F (175°C).
In a medium bowl, mix together the flour, oats, baking powder and salt.
In a separate bowl, whisk together the oil, almond milk, vanilla extract and cinnamon until combined.
Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix!
Fold in the mashed peaches until evenly distributed throughout the batter.
Drop spoonfuls of cookie dough onto a parchment-lined baking sheet and bake for 12-15 minutes or until golden brown on top. Allow to cool before serving. Enjoy!
