Ingredients:

1/4 cup (60 ml) coconut oil, melted
1/4 cup (60 ml) honey or maple syrup
1 teaspoon (5 ml) vanilla extract
1/2 cup (120 ml) rolled oats
1/2 cup (120 ml) all
purpose flour
1/4 teaspoon (1.25 ml) baking soda
Pinch of salt
1/3 cup (80 ml) dried cranberries

Cooking Instructions:

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, whisk together the melted coconut oil, honey or maple syrup and vanilla extract until combined.
Add the oats, flour, baking soda and salt to the wet ingredients and stir until combined. Fold in the dried cranberries.
Scoop out tablespoon-sized balls of dough onto the prepared baking sheet and flatten slightly with your fingers. Bake for 12-15 minutes until golden brown around the edges. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
