Ingredients:

60g butter, softened
30g granulated sugar substitute (such as Splenda)
1 egg yolk
1 teaspoon vanilla extract
120g all
purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon peppermint extract
40g semi
sweet chocolate chips

Cooking Instructions:

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, cream together butter and sugar substitute until light and fluffy. Beat in egg yolk and vanilla extract until combined.
In a separate bowl, whisk together flour, baking powder, salt and peppermint extract until combined. Gradually add dry ingredients to wet ingredients and mix until just combined. Fold in chocolate chips.
Drop dough by tablespoonfuls onto prepared baking sheet about 2 inches apart. Bake for 8-10 minutes or until edges are lightly golden brown. Allow to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
