Ingredients:

2 egg whites (room temperature)
¼ teaspoon cream of tartar
2 tablespoons artificial sweetener (or sugar substitute)

Cooking Instructions:

Preheat oven to 120°C/250°F. Line a baking sheet with parchment paper.
In a large bowl, beat the egg whites until foamy using an electric mixer.
Add the cream of tartar and continue to beat until soft peaks form.
Gradually add the artificial sweetener or sugar substitute while continuing to beat until stiff peaks form.
Using a spoon, drop small mounds of meringue onto the prepared baking sheet about 2 inches apart from each other.
Bake for 1 hour or until lightly golden brown on top and crisp on the outside but still soft on the inside when touched lightly with your finger.
Allow to cool completely before serving or storing in an airtight container for up to 3 days at room temperature or up to 1 week in the refrigerator.
