Ingredients:

½ cup of all
purpose flour
¼ teaspoon of baking powder
¼ teaspoon of baking soda
2 tablespoons of butter, melted and cooled slightly
2 tablespoons of honey or agave nectar (or other sweetener)
1 large egg white
½ cup of mashed ripe mangoes (about 1 large mango)

Cooking Instructions:

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour, baking powder and baking soda. Set aside.
In a separate bowl, whisk together the melted butter and honey until combined. Add the egg white and whisk until combined. Add the mashed mangoes and mix until combined.
Add the dry ingredients to the wet ingredients and mix until just combined (do not overmix). The dough should be thick but still slightly sticky.
Using a spoon or cookie scoop, drop heaping tablespoonfuls onto the prepared baking sheet about 2 inches apart from each other. Bake for 12-15 minutes or until golden brown around the edges and set in the center. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely before serving. Enjoy!
