Ingredients:

50g butter, softened
50g granulated sugar substitute (such as Splenda)
1 egg yolk
1 teaspoon lime zest
125g all
purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt

Cooking Instructions:

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, cream together the butter and sugar substitute until light and fluffy. Beat in the egg yolk and lime zest until combined.
In a separate bowl, whisk together the flour, baking powder and salt. Gradually add to the creamed mixture and mix until just combined.
Roll dough into 1-inch balls and place on prepared baking sheet about 2 inches apart. Bake for 8-10 minutes or until lightly golden brown around the edges. Allow to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
