Ingredients:

60g all
purpose flour
30g butter, softened
30g sugar substitute (e.g. stevia)
1 egg yolk
1 teaspoon lemon zest
½ teaspoon baking powder

Cooking Instructions:

Preheat oven to 350°F (175°C). Grease a baking sheet with butter or cooking spray.
In a medium bowl, cream together the butter and sugar substitute until light and fluffy.
Beat in the egg yolk and lemon zest until combined.
In a separate bowl, sift together the flour and baking powder.
Gradually add the dry ingredients to the wet ingredients and mix until combined into a dough.
Roll out the dough on a lightly floured surface to about ¼ inch thick and cut into desired shapes using cookie cutters or knife. Place on prepared baking sheet about 1 inch apart from each other.
Bake for 12-15 minutes or until golden brown around the edges. Allow to cool before serving or storing in an airtight container for up to 3 days at room temperature or up to 1 week in the refrigerator for best results.
