Ingredients:

1 cup all
purpose flour
½ teaspoon baking powder
¼ teaspoon baking soda
¼ teaspoon salt
½ cup butter, softened
½ cup granulated sugar substitute (such as Splenda)
1 egg
1 teaspoon vanilla extract
2 kiwis, peeled and diced

Cooking Instructions:

Preheat oven to 350°F (175°C). Grease a baking sheet with cooking spray.
In a medium bowl, whisk together the flour, baking powder, baking soda and salt. Set aside.
In a large bowl, cream together the butter and sugar substitute until light and fluffy. Beat in the egg and vanilla extract until combined. Gradually add in the dry ingredients until just combined. Fold in the diced kiwis until evenly distributed throughout the dough.
Drop spoonfuls of dough onto the prepared baking sheet about 2 inches apart from each other. Bake for 12-15 minutes or until golden brown around the edges. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely before serving. Enjoy!
