Ingredients:

50g butter, softened
50g brown sugar substitute (such as Splenda)
1 egg yolk
125g all
purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
50g dried cranberries or raisins
50g chopped walnuts or pecans (optional)

Cooking Instructions:

Preheat oven to 350°F (175°C). Grease a baking sheet with butter.
In a medium bowl, cream together the butter and brown sugar substitute until light and fluffy. Beat in the egg yolk until well blended.
In a separate bowl, sift together the flour, baking powder and salt. Gradually add to the creamed mixture and mix until just combined. Stir in the dried cranberries or raisins and nuts if desired.
Drop spoonfuls of dough onto the prepared baking sheet about 2 inches apart. Bake for 12-15 minutes or until golden brown around the edges. Allow to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
