60g butter, softened to room temperature
50g granulated sugar substitute (such as Splenda)
1 large egg, beaten lightly
1 teaspoon vanilla extract
50g dark chocolate chips

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour, baking powder and salt. Set aside.
In a large bowl, cream together the butter and sugar substitute until light and fluffy. Beat in the egg and vanilla extract until combined.
Gradually add in the dry ingredients to the wet ingredients and mix until just combined. Fold in the dark chocolate chips until evenly distributed throughout the dough.
Using a tablespoon or cookie scoop, drop spoonfuls of dough onto prepared baking sheet about 2 inches apart from each other. Bake for 8-10 minutes or until edges are lightly golden brown and centers are set but still soft to touch. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely before serving. Enjoy!
