Ingredients:

2 cups unsweetened shredded coconut
2 tablespoons coconut oil, melted
2 tablespoons honey or agave nectar (optional)
1 teaspoon vanilla extract
Pinch of salt

Cooking Instructions:

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, combine the shredded coconut, melted coconut oil, honey or agave nectar (if using), vanilla extract and salt. Mix until everything is well combined.
Using your hands, form the mixture into small balls and place them on the prepared baking sheet. Flatten each ball slightly with your fingers.
