Ingredients:

50g butter, softened
50g granulated sweetener of choice (e.g. stevia)
1 egg yolk
1 teaspoon vanilla extract
100g plain flour
½ teaspoon baking powder
50g desiccated coconut flakes

Cooking Instructions:

Preheat the oven to 180°C/350°F/Gas Mark
Line a baking tray with parchment paper and set aside.
In a medium bowl, cream together the butter and sweetener until light and fluffy. Add the egg yolk and vanilla extract and mix until combined.
In a separate bowl, sift together the flour and baking powder then add to the wet ingredients and mix until combined. Finally, stir in the coconut flakes until evenly distributed throughout the dough.
Roll tablespoons of dough into balls then place on the prepared baking tray, leaving enough space between each cookie for them to spread during baking. Bake in preheated oven for 12-15 minutes or until golden brown on top. Allow to cool before serving or storing in an airtight container for up to 3 days.
