Ingredients:

100g of cashews, chopped into small pieces
2 tablespoons of coconut oil, melted
2 tablespoons of honey or maple syrup (for sugar free version use 1 tablespoon of stevia)
1 teaspoon of vanilla extract
¼ teaspoon of baking soda
Pinch of salt

Cooking Instructions:

Preheat the oven to 350°F (175°C).
In a medium bowl, mix together the chopped cashews, melted coconut oil, honey or maple syrup (or stevia for sugar free version), vanilla extract, baking soda and salt until combined.
Line a baking sheet with parchment paper and spoon the cookie dough onto the sheet in small mounds.
Bake for 12-15 minutes until golden brown. Allow to cool before serving.
