Ingredients:

60g butter, softened
30g granulated sweetener (or to taste)
1 teaspoon vanilla extract
90g plain flour
1/4 teaspoon baking powder

Cooking Instructions:

Preheat oven to 180°C/350°F/Gas Mark
Line a baking tray with parchment paper.
In a bowl, cream together the butter and sweetener until light and fluffy. Add the vanilla extract and mix until combined.
In a separate bowl, sift together the flour and baking powder. Gradually add this to the butter mixture and mix until a dough forms.
Roll out the dough on a lightly floured surface to about 5mm thick and cut out shapes using cookie cutters of your choice. Place on the prepared baking tray and bake for 8-10 minutes or until golden brown around the edges. Allow to cool before serving.
