Ingredients:

2 cups all
purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
½ cup butter, softened to room temperature
½ cup granulated sugar substitute (such as Splenda)
1 large egg, lightly beaten
1 teaspoon vanilla extract
1 cup fresh blackberries, chopped

Cooking Instructions:

Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
In a medium bowl, whisk together the flour, baking powder, baking soda and salt. Set aside.
In a large bowl using an electric mixer on medium speed, beat together the butter and sugar substitute until light and fluffy. Beat in the egg and vanilla extract until combined.
Gradually add the dry ingredients to the wet ingredients and mix until just combined. Fold in the chopped blackberries until evenly distributed throughout the dough.
Drop heaping tablespoons of dough onto prepared baking sheets about 2 inches apart from each other. Bake for 12-15 minutes or until golden brown around the edges and set in the center. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely before serving. Enjoy!
