Ingredients:

2 cups all
purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup vegetable oil
2 eggs, lightly beaten
1/4 cup honey or agave nectar
1 teaspoon vanilla extract
1/2 cup chopped almonds (optional)

Cooking Instructions:

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour, baking powder and salt. Set aside.
In a large bowl, mix together the oil, eggs, honey or agave nectar and vanilla extract until well combined. Add the dry ingredients to the wet ingredients and mix until just combined. Fold in the chopped almonds if desired.
Divide the dough into two equal pieces and shape each piece into a log about 12 inches long and 3 inches wide on the prepared baking sheet. Bake for 25 minutes or until golden brown and firm to the touch. Remove from oven and let cool for 10 minutes before slicing into 1-inch thick slices with a serrated knife. Place slices back onto baking sheet cut side down and bake for an additional 10 minutes or until golden brown and crisp on both sides. Let cool completely before serving.
