Ingredients:

1/2 cup all
purpose flour
1/4 teaspoon baking powder
1/4 teaspoon ground cinnamon
1/8 teaspoon salt
2 tablespoons butter, melted and cooled slightly
2 tablespoons granulated sugar substitute (such as Splenda)
1 large egg white, lightly beaten
1/2 teaspoon vanilla extract
1/3 cup finely chopped peeled apple (about 1 small apple)

Cooking Instructions:

Preheat oven to 350°F. Line a baking sheet with parchment paper. Set aside.
In a medium bowl, whisk together the flour, baking powder, cinnamon and salt until combined. Set aside.
In a separate bowl, whisk together the melted butter and sugar substitute until combined. Add the egg white and vanilla extract and whisk until combined. Add the dry ingredients to the wet ingredients and stir until just combined (do not overmix). Fold in the chopped apples until evenly distributed throughout the dough.
Drop heaping tablespoonfuls of dough onto prepared baking sheet about 2 inches apart from each other (the cookies will spread slightly during baking). Bake for 12-15 minutes or until golden brown around the edges and set in the center. Allow to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely before serving.
