Ingredients:

200g cooked lobster meat, chopped into small pieces
2 tablespoons butter
1 onion, finely chopped
2 cloves garlic, minced
2 tablespoons all
purpose flour
500ml fish stock or vegetable stock
250ml double cream or heavy cream
2 tablespoons brandy or cognac (optional)
Salt and pepper to taste

Cooking Instructions:

Heat the butter in a large saucepan over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the flour and stir until combined. Cook for 1 minute more.
Gradually add the stock while stirring constantly to avoid lumps forming. Bring to a boil then reduce heat to low and simmer for 10 minutes.
Add the lobster meat and cream and simmer for another 10 minutes until thickened slightly. If using brandy or cognac add it now and stir to combine. Season with salt and pepper to taste.
Serve hot with crusty bread or crackers on the side if desired. Enjoy!
