Ingredients:

2 large carrots, peeled and cut into 1 cm thick slices
2 tablespoons olive oil
1 teaspoon ground cumin
1 teaspoon ground coriander
½ teaspoon garlic powder
¼ teaspoon ground cinnamon
Salt and pepper to taste
2 tablespoons chopped fresh parsley leaves
2 tablespoons chopped fresh mint leaves
½ cup plain Greek yogurt

Cooking Instructions:

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Place the carrots on the prepared baking sheet. Drizzle with olive oil and sprinkle with cumin, coriander, garlic powder, cinnamon, salt and pepper. Toss to coat evenly.
Roast in preheated oven for 25-30 minutes or until carrots are tender and lightly browned.
Remove from oven and transfer to a serving plate. Sprinkle with parsley and mint leaves. Serve warm or at room temperature topped with Greek yogurt. Enjoy!
