Ingredients:

1 head of cauliflower, cut into florets
2 tablespoons olive oil
1 teaspoon ground cumin
1 teaspoon ground coriander
½ teaspoon garlic powder
Salt and pepper to taste
2 tablespoons chopped fresh parsley leaves
2 tablespoons chopped fresh mint leaves
½ cup plain Greek yogurt

Cooking Instructions:

Preheat oven to 375°F (190°C).
Place cauliflower florets in a large bowl and drizzle with olive oil. Sprinkle with cumin, coriander, garlic powder, salt and pepper. Toss until evenly coated.
Spread cauliflower onto a baking sheet lined with parchment paper. Bake for 15 minutes or until golden brown and tender.
Meanwhile, in a small bowl combine parsley, mint and yogurt. Mix until combined.
Once cauliflower is done baking remove from oven and transfer to a serving plate. Top with herb-yogurt mixture and serve immediately.
