Ingredients:

1 head of cauliflower (about 500g)
2 eggs
1/2 cup grated Parmesan cheese (50g)
1/2 teaspoon garlic powder (2.5g)
1/4 teaspoon dried oregano (1.25g)
Salt and pepper to taste

Cooking Instructions:

Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper and set aside.
Cut the cauliflower into florets and place in a food processor. Pulse until it resembles rice or couscous.
Transfer the cauliflower to a microwave-safe bowl and microwave for 5 minutes on high power. Let cool slightly before transferring to a clean kitchen towel or cheesecloth and squeezing out as much liquid as possible.
In a large bowl, combine the cauliflower with the eggs, Parmesan cheese, garlic powder, oregano, salt and pepper until well combined.
Transfer the mixture to the prepared baking sheet and spread into an even layer about ¼ inch thick (6mm). Bake for 25 minutes or until golden brown and crispy on the edges.
Remove from oven and let cool slightly before adding your favorite toppings and baking for an additional 10 minutes or until cheese is melted and bubbly. Enjoy!
