Ingredients:

2 large eggs
½ avocado, mashed
1 tablespoon mayonnaise
1 teaspoon Dijon mustard
Salt and pepper to taste

Cooking Instructions:

Place the eggs in a pot of cold water and bring to a boil over medium heat. Boil for 8 minutes then remove from heat and let cool. Peel the eggs and cut them in half lengthwise. Remove the yolks and place them in a bowl.
Mash the avocado with a fork until it is smooth. Add the mashed avocado to the egg yolks along with the mayonnaise, mustard, salt and pepper. Mix until everything is combined.
Spoon the mixture into each egg white half and garnish with additional salt and pepper if desired. Serve immediately or refrigerate until ready to serve.
