Ingredients:

2 cups of kale leaves, chopped
1 medium sweet potato, peeled and cubed
2 tablespoons of olive oil
1 tablespoon of tahini
2 tablespoons of lemon juice
1 teaspoon of garlic powder
Salt and pepper to taste

Cooking Instructions:

Preheat the oven to 375°F (190°C).
Place the cubed sweet potatoes on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and pepper. Bake for 20 minutes or until golden brown.
In a large bowl, combine the kale leaves, roasted sweet potatoes, tahini, lemon juice, garlic powder, salt and pepper. Mix until everything is well combined.
Serve the salad immediately or store in an airtight container in the refrigerator for up to 3 days.
